Brillat-Savarin’s La Physiologie du goût (1826) is a paragon of the composite essay. This vast collection of things seen, heard, and digested, modelled on British Table talks, marries precepts with puns, anecdotes with recipes, and learned axioms with playful digressions. He thus founds gastronomy on a flavoursome fusion of knowledge, and a new articulation of mind and body which invites the reader to live the “great adventure of desire” (R. Barthes).
